Watermellon Rind Preserves Recipe

Ingredients:
1 lbs: Watermelon cubes,
2 tsp: Water,
2 tbsp: Lime, calcium oxide
2 cup: Sugar,
1 tsp: Water,
1/2: Lemon, sliced

Directions:

PRESERVES 1. Soak melon in limewater for 3+ 1/2 hours. Drain. 2. Soak
in clear water for 1 hour. Drain. 3. Cover with water and boil for 1+
1/2 hour. Drain. 4. Make syrup fo2 c. sugar and 1 quart water. 5. Add
rind and boil for 1 hour. 6. As syrup thickens add lemon [half ob.
for each lb. of melon]. 7. When syrup is thick and rind clear, pack
in hot, sterilized jars,
top with syrup and seal.
