West Indian Marinade Recipe

Yield: 2 1/2 cups

Ingredients:
1: White Onion, Finely Chopped
1: Green Pepper, Seeded and -Finely Chopped
1: Scotch Bonnet Pepper, Seeded -and Finely Chopped
2 Cloves: Garlic, Minced
1 tsp: Salt,
1 tsp: Freshly Ground Black Pepper,
1/2 cup: Chicken Stock,
1/2 cup: White Wine Vinegar,
Juice of One Lime,
1 tsp: Sweet Paprika,
1 tsp: Dried Oregano,
2 Sprigs: Fresh Coriander, -Finely Chopped
2 Sprigs: Fresh Parsley, Finely -Chopped

Directions:
In a large bowl, combine all the ingredients to form a paste. Cover
and refrigerate.
