Mexican Beef Stir-fry Recipe

Ingredients:
1 lbs: Beef round steak, trim well
1: Pepper, red bell, cut thin
2 tbsp: Oil,
1 medium: Onion, cut into thin wedges
1 tsp: Cumin, ground
1 medium: Jalapeno pepper, cut into
1 tsp: Oregano, dried, crushed
-slivers,
1 Clove: garlic, crushed
3 cup: Lettice, romaine, cut 1/4"
Directions:
Partially freeze beef and cut into 1/8 inch strips. Combine oil, cumin,
oregano and garlic. In a skillet, over medium high heat, heat half the
seasoned oil. Add bell peppers, onion and jalapeno pepper. Stir fry until
tender crisp. Remove and reserve. Stir-fry beef in remaining oil for 1 to
2 minutes. return vegetables to skillet and heat through. Serve hot.

mg sodium, 65 mg chol. Percent of calories from fat = 42.8%
