Yeast Free Chicken Barley Soup Recipe

Ingredients:
Chicken parts, (backs, necks
1/2 lbs: Snow peas,
-- whatever) water,
5: Carrots, chopped
2: Bay leaves,
2 Stalks: celery, chopped
1 pinch: Basil,
pn Of thyme, oregano;
1 centiliter: Garlic, minced
Salt and pepper to taste,
2 tbsp: Fresh parsley, chopped
2: Tomatoes, chopped
4: To 5 scallions, chopped
1/2 cup: Barley,
Directions:
Place chicken in soup pot. Fill 3/4 ful with water. Add bay leaves,
basil, garlic and parsley. Cover, bring to a boil, and simmer 1 hour.
Meanwhile, prepare vegetables. sEt aside. When chicken is tender, remove
from pot, let cool and remove meat from bones. Place meat back into soup
pot. Add remaining ingredients and simmer as long as possible, but for at
least 1 more hour.
