Jicama, Apple And Celery Root Slaw Recipe

Ingredients:
1/3 cup: Plain yogurt, lowfat
1/4 cup: Sour cream,
3 T: Green onion, minced (white part only)
4 tsp: Fresh lemon juice,
2 tsp: Fresh cilantro, minced
1 tsp: Lemon peel, grated
1/4 tsp: Fresh ground pepper,
1 large: Red apple,
1 cup: Celery root, peeled & grated
1 cup: Jicama, peeled & grated
Directions:
Mix all ingredients together except apple, jicama and celery root. Core
the apple, but dont peel it. Grate it into the yogurt mixture (prevents
browning) and, any remaining apple skin should be chopped and added to the
mixture. Blend in the celery root and jicama. Let stand 1 hour before
serving.
