Lentil Soup With Sausage Recipe

Yield: 16 servings

Ingredients:
1 large: Onions, white, chopped
2 each: Garlic cloves, crushed
2 cup: Lentils,
1 tbsp: Oil, olive
2 quart: Water,
1 can: Tomatoes,
1: Bay leaves,
1 tbsp: Salt,
1/2 tsp: Black pepper,
1/2 lbs: Summer sausage,

Directions:
Briefly saute veggies in olive oil for 3-4 minutes. Place all ingredients,
except sausage, in a large pot and simmer, covered, for about 2 hours. Dice
sausage without casings and simmer 10 minutes. Drain. Add to soup 1/2 hour
before serving. Top with Parmesan cheese.

Sylvias comments: rather than messing with diced summer sausage, I chopped
up some bacon and threw it in an hour before cooking. I probably didnt
need to; the soup was very flavorful. But this has kept a week in the
fridge/cooler and has heated very well in the microwave at work.
