Low-fat Breaded Seafood Recipe

Ingredients:
2 tbsp: Seafood Coating Mix, recipe
1 cup: Dry breadcrumbs,
2 lbs: Fish fillets or seafood,
1/2 cup: Evaporated skim milk,
Cooking spray,
Parsley sprigs, for garnish
Lemon wedges, for garnish
Directions:
Preheat oven to 400 F. Spray a baking sheet with cooking spray.
Combine Seafood Coating Mix and breadcrumbs in a pie plate and put
evaporated milk in a small bowl.
Dip fillets in nonfat evaporated milk and then roll in crumb mixture, to
coat. Place on prepared baking sheet, with space between each one. Bake
for about 15 minutes, until coating is browned and fish is opaque and
seperates (flakes) when prodded with a fork. Dont overcook until fish is
starting to come apart by itself, or it will be dry.
Serve on a warm platter, garnished with parsley sprigs and wedges of
lemon.
