Low-fat Cream Of Broccoli Soup Recipe

Ingredients:
3 cup: Cooked, chopped broccoli,
1 tbsp: Sliced green onion,
1 cup: Vegetable broth,
1 cup: 1% fat soy milk,
3 tbsp: White wine, -=or=- non-alcohol white wine optl
3 tbsp: Cornmeal,
x Broccoli florets for garnish optional,

PER 1/2 CUP SERVING

*gm carbo,
*mg calcium,
*mg iron,
*mg sodium,
*gm fiber,

Directions:
In saucepan, combine broccoli, onion, and broth. Heat to boiling. Stir soy
milk and wine, if desired, into broth. Reheat to boiling. Slowly whisk
cornmeal into boiling soup, stirring until thickened and hot. Pour soup
into food processor or blender. Process until broccoli is pureed. If
necessary, reheat soup before serving. Garnish with broccoli florets, if
desired.
