Maple Sweetmeats Recipe

Ingredients:

FROM FRESH WAYS WITH PASTRIE
1/3 cup: Dried apricots,
1/2 cup: Pitted fresh dates,
1/3 cup: Pitted prunes,
6 T: Golden raisins,
2 T: Maple syrup,
1 cup: Finely chopped unsweetened,
Coconut,
2 t: Cocoa powder,

Directions:
Put the apricots, dates, prunes, golden raisins, and maple syrup into a
food processor, and blend until a sticky paste is formed. Transfer the
mixture to a mixing bowl and add 3/4 cup of the unsweetened coconut. Mix
by hand to make a soft paste that is no longer sticky.

Divide the fruit paste into 30 equal pieces, then roll each one into a
smooth ball. Place the remaining coconut in a dish and put the cocoa
powder in another. Roll half of the balls in the coconut to coat them,
then roll the remaining balls in the cocoa powder.

Place the sweetmeats in paper candy cups and refrigerate them for about
one hour. Serve chilled.
