Sugarless, Low-fat Blueberry Cheesecake Recipe

Ingredients:
1 lbs: Cottage cheese,
2: Egg whites,
1/2 cup: Plain low fat yogurt,
1 tsp: Vanilla,
2 tsp: Fresh lemon juice,
1/4 cup: Frozen orange juice concen.,
2: Ripe bananas, cut up
3 T: Flour,

TOPPING
1 cup: Undrained crushed pineapple,
1/4 cup: Frozen orange juice concen.,
1 T: Cornstarch,
1 cup: Fresh or frozen blueberries,

Directions:
Blend cheese, egg whites, yogurt, vanilla and lemon juice in a food
processor, blender, or mix very well by hand. When ingredients are
thoroughly mixed add juice concentrate, bananas and flour. Continue
blending until mixture is creamy. Pour into a non-stick 9-inch pie pan
and bake in a pre-heated 350 degree oven for 45 minutes. Remove from
oven, cool and cover with topping, recipe follows.

TOPPING:

Combine all ingredients in a small saucepan and cook over medium heat,
stirring constantly, until the sauce thickens. Cool and pour over pie.
