Tomato-rice Soup Recipe

Ingredients:
1 can: Stewed Tomatoes,
1 can: Tomato sauce,
1/2 medium: Onion, chopped
1/2 medium: Green Pepper, chopped
1 cup: Brown Rice, cooked
1/3 cup: Vegetable Broth,
1/4 t: Pepper, fresh ground
ds Mrs. Dash, extra spicy
GREAT USE FOR LEFTOVERS!,

Directions:
Cook Rice.. (May use leftover rice, I even used
leftover onions and peppers... :)

Chop Onions, green peppers, sautee in Veggie broth til
onions clear.

In separate pan, heat tomatoes and sauce. Add Spices.
Add sauteed veggies. Simmer on med for 30 minutes...

Soup will be thick.. I like it thick.. so you can
always add extra veggie broth. VERY FILLING! And
spicy! YUM!

You may also (of course) substitute the canned toms
for fresh.. and homemade sauce.. thatll eliminate the
sodium, too. :)
