Creme Fraiche+ Recipe

Yield: 1 cup

Ingredients:
1 cup: Whipping cream,
2 tbsp: Buttermilk,

Directions:
Heat whipping cream in heavy small saucepan to lukewarm (85 degrees.)
Remove whipping cream from heat and mix in 2 tablespoons of
buttermilk. Cover and let stand in warm draft-free area until
slightly thickened, 24 to 48 hours depending on temperature of room.
Refrigerate Creme Fraiche until ready to use. Can be prepared as long
as 2 weeks ahead.

Excellent with fresh fruit esp. strawberries.
