Two-lettuce Salad With Creamy Horseradish Dressing Recipe

Ingredients:
1 Head: leaf lettuce,
1 Head: red leaf lettuce,

DRESSING
1/2 cup: Plain low-fat yogurt,
1 tsp: White horseradish,
1 tbsp: Mayonnaise,
1 tsp: Capers,
1 tbsp: Finely chopped fresh chives,
Salt and pepper to taste,
1 tsp: Grainy-style Dijon mustard,

Directions:
1. Tear the lettuce into pieces and place in a salad bowl.

2. In a medium-sized bowl whisk the dressing ingredients together
until smooth.

3. Place the dressing on the salad, toss well, and serve immediately.

*It is best to use prepared horseradish preserved in vinegar for this
recipe.

Neither I nor my husband (whos a salad freak) were terribly
impressed with this salad. He looked in the bowl and said, "Whats
all this rabbit food?" We usually dont eat salad thats just
lettuce! Also, they mean what they say about serving immediately.
Erik tried to have some the next day and said that it was very bitter.
