Cool Lemon Chicken Salad~ Recipe

Ingredients:
1/2 cup: Miracle Whip,
2 tbsp: Fresh basil, chopped OR
2 tsp: Dried basil,
1 tbsp: Lemon juice,
1 tsp: Grated lemon rind,
2 cup: Chopped, cooked chicken &/or
Turkey,
1 cup: Halved red or green grapes,
1/2 cup: Halved chinese pea pods *,
1/2 cup: Thin sliced red onion **,
Lettuce leaves, chopped or
Torn, optional
Directions:
* remove "strings", blanch and cut to bite-sized pieces. ** regular
onion or green onion - including tops can be used.
Mix Miracle Whip, basil, lemon juice and peel. Add remaining
ingredients, except lettuce. Mix lightly and refrigerate. Serve on
lettuce, if desired.
Serves 4 but recipe doubles well.
Per serving: Calories 334; fat 20.5 g; cholesterol 74 mg;
carbohydrate 16.1 g; fiber 1.6 g; protein 22.1 gl sodium 235 mg;
potassium 358 mg.
Note: Can add any salad "fixing" (tomatoes, bean sprouts, etc.; black
olives work okay but alter the taste of the whole salad) at serving
time.
