Danish Yellow Pea Soup Recipe

Ingredients:
1 lbs: Split yellow peas,
2 quart: Chicken stock,
1: Meaty smoked ham bone,
1 medium: Onion, chopped
2: Carrots, chopped
2 Ribs: ,
1 medium: Potato, peeled & finely cubed
1: Bay leaf dashes,
1 Clove: garlic, pressed or minced celery, chopped thyme, marjoram, savory

Directions:
Optional: handful of frozen green peas 1 peeled & chopped tomato

Rinse and sort peas. To stock pot, add peas, stock and ham bone;
simmer 1 hour. Add the veggies and seasonings and cook for another 1
to 1-1/2 hours. If using optional veggies, add during last 1/2 hour
of cooking. When done, remove bay leaf and serve. Makes a nice main
course with a green salad & crusty loaf or dill bread.
