Directions:
Oven temperature: 375 degrees F and 350 degrees F Modern pork ribs
are less fatty than before, are tastier, juicier, and more tender
when cooked in this homemade barbeque sauce. For 4 servings you will
need: 2-1/2 lbs country-style pork ribs 1-1/2 cups chopped onions 2
cloves garlic, minced, or pressed 1/3 cup butter or margarine 1 cup
(8 oz. can) tomato sauce 1/3 cup brown sugar, packed 1/4 cup soy
sauce 3 Tbsp. cider vinegar 2 Tbsp. chili paste with garlic,
available in Oriental markets, optional Preparation: 1. Blanch ribs
in a large kettle of simmering water for 30 minutes. Drain. 2. While
ribs blanch, in a large saucepan, cook the onions and garlic in the
butter over low heat, stirring, for 15 minutes until softened. 3. Add
the tomato sauce, brown sugar, soy sauce, vinegar and chili paste, if
desired. Simmer, stirring occasionally, for 30 minutes. 4. Arrange
ribs in a shallow baking dish. Spoon sauce over the ribs. 5. Bake at
375 degrees F. for 20 minutes. Reduce oven temperature to 350 degrees
F. Brush with sauce. 6. Bake 20 minutes more. Turn meat over. Brush
again with sauce and bake another 20 minutes. Serve hot or slightly
cooled. Tips: You may prepare the barbeque sauce and keep it on hand,
refrigerated. It will keep for several days. You may add a few drops
smoke flavoring to the sauce, if desired. Good served with: Baked
beans and coleslaw. French fried potatoes and hot biscuits.
