Barbecued Pheasant - China Recipe

Ingredients:
2: Pheasants-whole,
1/4 cup: Soy sauce,
2: Garlic cloves-minced,
2 tsp: Salt,
1/4 tsp: Pepper,
1 tsp: Sugar,
1 1/2 tsp: Five spice,
2 tbsp: Oil,
Directions:
Wash and dry pheasants. Mix together the soy sauce, garlic, salt,
pepper, sugar, five spices and oil. Rub the pheasant inside and out.
Let stand for one hour. Place on a rack in a shallow roasting pan.
Roast in a 425 oven for two hours or until tender and brown. Baste
and turn frequently. To serve, carve into joints or chop up into inch
wide pieces Chinese fashion.
