Fresh Okra & Tomatoes (microwave) Recipe

Ingredients:
4 medium: Ripe tomatoes, peeled
3 cup: Sliced fresh okra,
1/4 cup: Chopped onion,
1/4 cup: Chopped green pepper,
1/2 cup: Water,
1 tsp: Sugar,
1 tsp: Salt,
1/2 tsp: Pepper,
1 tbsp: All-purpose flour,
2 tbsp: Water,
Directions:
Puree 2 tomatoes in electric blender or food processor; chop
remaining 2 tomatoes.
Combine okra, onion, green pepper, and 1/2 cup water in a 2-quart
casserole; mix well. Cover with heavy-duty plastic wrap. Microwave at
HIGH for 9 to 11 minutes or until okra is done; stirring and turning
dish every 3 minutes. Drain and rinse vegetables well, reserving
vegetables in dish.
Add chopped tomatoes, tomato puree, sugar, salt, and pepper to okra
mixture; mix well. Cover casserole with heavy-duty plastic wrap, and
microwave at HIGH for 3 minutes.
Combine flour and 2 tablespoons water; beating with a wire whisk
until flour is dissolved; gradually stir into okra mixture. Cover and
microwave HIGH for 1-1/2 to 2-1/2 minutes or until mixture is
thickened and bubbly, stirring at 1-minute intervals. Yield: 4 to 6
servings.
