Mint And Rosemary Jelly Recipe

Ingredients:
2 cup: Packed mint leaves,
1/4 cup: Rosemary leaves,
1 cup: Water,
3/4 cup: Orange juice,
3 cup: Sugar,
Green food colouring, optional
1/2 bottle: liquid pectin,
Rosemary sprigs for garnish,

Directions:
chop mint and rosemary. Place in large saucepan, add water, and
orange juice. Bring to boil. Remove from heat. Let stand 10
minutes to infuse.

Strain mixture and return mint infusion to saucepan; add sugar and
food colouring (if using) bring to boil. Stir in pectin and bring
back to full rolling boil. boil vigourously for 1 minute.

Remove from heat, skim foam off and stir for one minute. Place in
jars, with rosemary sprig and seal. Source: Canadian Living
