Layered Salad With Cumin-honey Vinaigrette - Bon Appetit Recipe

Ingredients:
1 large: Red onion, cubed
2 large: Avocados, peeled, pitted, cubed
1 large: Red bell pepper, seeded, cubed
1: Cucumber, peeled, seeded, cubed
Cumin-Honey Vinaigrette,
, separate recipe
12 cup: Mixed greens, such as curly endive, spinach & romaine

Directions:
Combine onion, avocados, bell pepper and cucumber in large bowl,. Mix
in 3/4 C vinaigrette. Let stand at room temperature 15 minutes.

Place greens in large bowl and toss with 1/4 C vinaigrette. Season
greens with salt and pepper. Arrange half of greens in clear bowl.
Top with half of vegetables. Repeat with remaining greens and
vegetables. Serve, passing remaining vinaigrette separately.
