Lemon Recipe

Ingredients:
1 tsp: Lemon peel, grated
2 1/4 cup: Unbleached flour,
1/2 tsp: Baking powder,
1/2 tsp: Baking soda,
1/4 tsp: Salt,
1 1/2 cup: Granulated sugar,
3/4 cup: Applesauce, at room
Temperature,
3: Egg whites, whipped
3/4 cup: Skim milk, at room
Temperature,
4 1/2 tsp: Lemon juice, at room
Temperature,

Directions:
Preheat oven at 350. Prepare pan(s) with cooking spray and flour.
In a mixing bowl, combine lemon peel, flour, baking powder, baking
soda, salt, and sugar. In another mixing bowl, combine applesauce,
egg whites, milk, and lemon juice. Mix dry ingredients with wet
ingredients just until moistened. Pour batter into prepared pan(s).
Bake for 40 to 50 minutes depending on pan size.
