Orange Beef And Wild Rice Recipe

Ingredients:
3/4 lbs: Topround steak, 1/2" cubes
1: Onion, chopped
2: Carrots, sliced
1/2 lbs: Mushrooms, sliced
2 Cloves: garlic, finely chopd
1/2 tsp: Dried thyme,
1 tsp: Grated orange zest,
1 cup: Orange juice,
1 can: (13 3/4 oz) reduced-sodium, beefbroth
1 package: (6 oz) wild and white rice, pilaf
1/4 cup: Chopped parsley,
Directions:
Prep: 10 minutes, Cook: 40 - 45 minutes Cost: $ 1.66 each
1) Brown beef in nonstick dutch oven. Add onion, carrot, mushrooms;
cook 8 minutes. Add garlic; cook 1 minute. Add thyme, zest, juice,
broth, rice with seasonings.
2) Simmer, covered 30 to 35 minutes. Stir in parsley.
Nutrient Value per serving: 346 calories, 29 g protein, 5 g fat, 46 g
carbohydrate, 559 mg sodium, 53 mg cholesterol.
