Arugula Pesto - House Beautiful Recipe

Ingredients:
1 1/3 cup: Packed fresh arugula leaves,
2 large: Garlic doves, peeled and
1/3 cup: Packed fresh flat-leaf,
-crushed,
-parsley sprigs,
3 tbsp: Extra-virgin olive oil,
1/3 cup: Packed fresh spinach leaves,
2 tbsp: Freshly grated Parmesan,
2 tbsp: Walnuts or pistachios,
-cheese, preferably Reggiano
Directions:
In a blender or food processor, place the arugula, parsley, spinach,
nuts, and garlic. Process until finely minced. Add oil and cheese and
process until blended. Transfer to a small bowl, cover and
refrigerate. Makes about 3/4 C.
