Tomato Salsa - Country Cooking Recipe

Ingredients:
1 tbsp: Vegetable oil,
-seeded and finely chopped,
1 small: Onion, chopped
1/4 tsp: Salt,
1 Clove: garlic, chopped
1/4 tsp: Ground black pepper,
2 large: Ripe tomatoes, chopped
3 tbsp: Chopped fresh cilantro,
1 small: Jalapeno pepper, stemmed,
-leaves,

Directions:
1. In heavy 2-quart saucepan, heat oil over medium heat, Add onion and
saute 5 minutes. Stir in garlic and saute until soft. Remove from
heat.

2. Stir tomatoes, jalapeno pepper, salt, and black pepper into onion
mixture. Cover and refrigerate 30 minutes to blend flavors, just
before serving, stir in cilantro.
