Baked Peach Pancake Recipe

Ingredients:
2 cup: Peaches,
1/2 cup: All-purpose flour,
Fresh or frozen sliced,
1/2 cup: Milk,
Peeled,
1/2 tsp: Salt,
4 tsp: Sugar,
2 tbsp: Butter or margarine,
1 tsp: Lemon juice,
Ground nutmeg,
3 each: Eggs,
Sour cream, optional

Directions:
In a bowl, combine peaches with sugar and lemon juice; set aside. In a
mixing bowl, beat eggs until fluffy. Add flour, milk and salt; beat
until smooth. Place butter in a 10-in, skillet; bake at 400 deg. for
3-5 minutes or until melted. immediately pour butter into hot
skillet. Bake for 20-25 minutes or until pancake has risen and is
puffed all over. Fill with peach slices and sprinkle with nutmeg.
Serve immediately with sour cream if desired. Yield: 4-6 servings
