Black-eyed Pea Spread Recipe

Ingredients:
15 oz can black-eyed peas or,
Large garlic clove, chopped
1 1/2 cup: Cooked black eyed peas,
1/2 tsp: Dried tarragon,
1/4 cup: Fresh parsley, tight pack
1/4 tsp: Pepper,
2 tbsp: Lemon Juice,
Salt, to taste
2 tbsp: Olive oil,
Directions:
Reserve a few peas for garnish and place the remaining peas in food
processor along with parsley, lemon juice, olive oil, garlic,
tarragon and pepper. Process until smooth. Taste and adjust
seasonings, adding salt if desired. Transfer to a serving bowl and
garnish with reserved peas. Serve with toasted slices of french bread
