Cooking Fresh Pumpkin Recipe

Ingredients:
Recipe via Meal-Master (tm) v8.02
Directions:
Wash pumpkin and cut in half, crosswise.
Remove seeds and strings, reserving seeds for roasting, if desired.
Place pumpkin in a baking pan face down, shell up, in 1/2-inch of
water. Bake at 325 degrees for 1 hour, or until tender. Large
pumpkins may require longer baking time.
Scrape the pulp from the shell and put through a strainer or ricer.

1 1/2 c Pumpkin, cooked 1 ts Cinnamon
1 1/2 c Evaporated Milk 1/2 ts Ginger
1/2 c Brown Sugar 1/8 ts Cloves
1/4 c Sugar 4 Eggs, slightly beaten
1/2 ts Salt 1 Pie Shell, baked
Combine all ingredients in a double boiler and cook until thick.
Cool and poor into pie shell.
This pie filling can also be served as a pudding.
