Grilled Florida Grouper Recipe

Ingredients:
FISH
6: Grouper fillets,
1/2 tbsp: Olive oil,
-skinned and boned,
1/2 tbsp: Lime juice,
-, 6-8oz ea
Salt and pepper,
MANGO ARUGULA RELISH
2: Mangoes, pitted, peeled
-cut in julienne,
-cut in julienne,
1/2 cup: Extra-virgin olive oil,
1 large: Red bell pepper,
5 tbsp: Key lime juice,
-roasted, peeled, seeded
1 tbsp: Basil, chopped
-cut in julienne,
2 cup: Arugula, loosely packed
1/2 small: Sweet onion,
Rinsed and coarsely chopped,
ORANGE MINT ORZO PILAF
2 tbsp: Olive oil,
1 medium: Red beefsteak tomato,
1 cup: Sweet onion, (s), diced
-seeded, cut in 1/4" dice
3 cup: Chicken stock,
2 tbsp: Mint, chopped
1 cup: Orange juice,
Salt and pepper,
1 1/2 cup: Orzo pasta,

Directions:

2 pk (10oz ea) 3 tb Pine nuts
Frozen spinach, thawed 3 tb Olive oil
8 oz Med shrimp 6 Garlic clove(s), minced
-peeled and deveined 3/4 c Parmesan cheese, shredded
8 oz Bay scallops Salt and pepper
1 1/2 c Orzo pasta
Drain the spinach in a colander and press it with the back of a spoon
or squeeze it to remove liquid. You should have about 1
cups. Set
aside,
Bring 2 quarts of water to a boil in a medium saucepan. Add the
shrimp and scallops, cover and let sit off the heat until the seafood
is opaque in the center, about 8 minutes. With a slotted spoon,
transfer the seafood to a bowl and cover to keep warm.
Return the water to a boil and stir in the orzo with 1 tsp salt, if
desired. Boil uncovered until tender, 8-10 minutes. Drain. Cover and
set aside if not ready to use.
Meanwhile, heat a large saucepan over medium heat. Add the pine nuts
and cook, stirring often, until golden, about 6 minutes. Pour from
the pan and set aside. Heat the oil in the pan, add the garlic and
cook until tender, about 1 minute. Add the spinach and orzo and stir
until heated through. Stir in the seafood, pine nuts and cheese.
Season to taste with salt and pepper and serve.
