Lettuce And Onion Soup Recipe

Ingredients:
2 ounce: Butter,
2 pint: Chicken stock,
1 large: Onion, finely chopped
Salt and pepper,
1 large: Lettuce, shredded
2 3/4 fl oz: Double cream,

Directions:
Heat the butter in a saucepan, add the onion and fry gently until
soft, being careful not to allow it to colour. Add the lettuce and
cook in the butter for a few minutes, then add the stock and
seasoning. Bring to the boil, cover and simmer for 5-7 minutes. Place
half the mixture in a blender and puree. Turn into a bowl and repeat
with the remaining mixture. Return to the saucepan. Bring to the
boil, remove from the heat and gradually add the cream, stirring all
