Ingredients:
1/2 cup: All-purpose flour,
1 medium: Green pepper, cut in 1"
1 tsp: Salt,
Pcs,
1/4 tsp: Pepper,
1 each: Sweet red pepper, cut in
1 lbs: Liver,
1: " pcs,
Cut into bite-size pieces,
1 cup: Beef broth,
4 tbsp: Vegetable oil, divided
2 tbsp: Soy sauce,
1 large: Onion,
1 tbsp: Cornstarch,
Thinly sliced into rings,
Cooked rice or noodles,
Directions:
In a bowl, combine flour, salt and pepper. Add liver; toss to coat.
Heat 2 tablespoons oil in a large skillet. Add onion and peppers:
cook until crisp-tender. Remove from pan: set aside. Add remaining
oil to the skillet. Cook and stir liver for 5-7 minutes or until no
pink remains. In a small bowl, combine beef broth, soy sauce and
cornstarch; stir into liver. Cook and stir constantly until sauce
thickens. Return vegetables to the skillet and cook until heated
through. Serve over rice or noodles. Yieldr 4-6 servings
