Mamas Leek Soup Recipe

Ingredients:
1/2 lbs: Leeks,
1 ounce: Cheddar cheese, grated
2 ounce: Butter or margarine,
Salt and pepper,
1/2 pint: White sauce mix,
Croutons,
1 pint: Milk,
Directions:
Thinly slice the leeks, wash thoroughly and drain well. Melt the
butter, add the leeks, cover and cook gently for about 10 minutes,
until tender. Off the heat, shower in the contents of the sauce mix
packet and gradually add the milk, stirring briskly. Bring to the
boil, stirring, and cook for about 3 minutes. Puree in a blender or
work through a wire sieve. Add the cheese, reheat and adjust
seasoning-add a little more milk if necessary. Serve with toast
