Mashed Spinach, Indian Style Recipe

Ingredients:
3 cup: Packed spinach,
1 tsp: Cayenne,
1 tbsp: Ghee,
2 medium: Tomatoes, chopped
2 medium: Onions, diced
Salt,
2 each: Garlic cloves, sliced
1 tsp: Garmam masala,
1 tsp: Grated ginger,
Directions:
Wash & drain spinach. Bring to a boil in a pan with a little water,
remove from heat & drain very well. Chop spinach.
Heat ghee in a skillet & saute onion & garlic until they are golden.
Add ginger, cayenne & tomatoes. Stir over a moderate heat for 3
minutes. Mix in the chopped spinach. Add salt & cook, stirring, for
5 minutes. Sprinkle with garam masala & continue to stir-fry for 3 to
5 minutes.
