Minestrone-style Turkey Soup Recipe

Ingredients:

1 can: Great northern beans, drain
1: Meaty turkey carcass, cut
-, 15 oz.

1 can: Garbanzo beans, drained
1 tbsp: Instant chicken bouillon,
-, 15 oz.

1 large: Onion, chopped
1: Bay leaf,
1 Clove: garlic, minced
2 cup: Cabbage, shredded
1/4 cup: Snipped parsley,
1 can: Stewed tomatoes, cut up
1 tsp: Dried basil, crushed
-, 14 1/2 oz.

Directions:
Combine turkey, bouillon, bay leaf, and 7 cups water. Bring to
boiling; reduce heat. Cover; simmer 1 hour. Remove turkey carcass;
cool. Remove meat from bones and chop. Discard bones. Strain broth.
Return broth and turkey to pan. Stir in cabbage, undrained tomatoes,
beans, onion, garlic, parsley, basil, and 1/8 teaspoon pepper. Bring
to boiling; reduce heat. Cover; simmer 25-30 minutes. Serves 6.
