Chicken And Tomato Burritos - Country Living Recipe

Ingredients:
1/2 lbs: Skinless, boneless chicken
1 Clove: garlic, finely chopped
-breast, cut into 1/2-inch
2 T: Finely chopped fresh,
-thick strips,
-cilantro leaves,
1/3 cup: Finely chopped onion,
1/2 t: Chili powder,
1/4 cup: Finely chopped sweet green,
1/2 t: Ground cumin,
-pepper,
1/4 t: Salt,
4: Ripe plum tomatoes, halved,
1/3 cup: Shredded Cheddar cheese,
-seeded, and chopped
6: 6-inch flour tortillas,

Directions:
1. In 1-quart microwave-safe bowl, combine chicken, onion, green
pepper, tomatoes, garlic, 1 T cilantro, the chili powder, cumin, and
salt. Cover and microwave on high (100 percent) 1 minute. Stir,
cover, and microwave on high 1 to 2 minutes longer or until chicken
is just cooked through. Stir in cheese.

2. Just before serving, stack tortillas and cover loosely with
microwave-safe plastic wrap; microwave 30 to 40 seconds just until
warm. With slotted spoon, place some of chicken mixture on one side
of each tortilla; roll up tortillas tightly to enclose filling. Place
burritos on serving platter. Microwave cooking juices remaining in
bowl on high 2 minutes to reduce to about 3 T. Drizzle reduced juices
over burritos; top with remaining cilantro and serve.
