Green Spinach, Pine Nut And Mushmom Salad Recipe

Ingredients:

SOURCE: AUSTRALIAN VOGUE WIN
250 gram: Mushrooms,
-shredded,
1/2 cup: Vinaigrette,
2 T: Toasted pine nuts,
1 bunch: Endive,
1/2 cup: Chopped spring onions,
1 each: Head lettuce,
1 each: Avocado, sliced, optional
Spinach, washed, stems
Extra vinaqrette,
-removed and large leaves,

Directions:
Marinate mushrooms in vinaigrette for 2 hours. Just before serving,
tear endive and lettuce into pieces and place in a bowl with
mushrooms and spinach. Add pine nuts, spring onions and avocado.
Toss together and add more vinaigrette if necessary. Helen Gray
