Lobio Recipe

Ingredients:
225 gram: Red kidney beans, soaked o/n
2 tsp: Paprika,
150 milliliter: Olive oil,
Pinch cayenne pepper,
Cloves of garlic, chopped
Salt and fresh grd. pepper,
120 gram: Walnuts, roughly crushed
-to taste,
Directions:
Cook the beans in plenty of boiling water for 45 mins. or until
tender. Drain. Heat half the olive oil, throw in half the garlic,
cook for a moment then add the beans and half the walnuts. Heat
together gently and season well with the paprika, cayenne, salt &
pepper.
Meanwhile, put the remaining oil, garlic and walnuts in a food
processor. Blend to a thick paste and when the beans are hot, stir
this in. Can be served hot or chilled for a bean salad. From: The
