Bison Bologna Recipe

Ingredients:
5: Feet medium hog casings,
2 centiliter: Finely minced garlic,
4 lbs: Bison, (buffalo) meat, with
2 tsp: Finely minced shallots,
-fat, cubed
1/2 tsp: Cayenne,
1 lbs: Beef fat, cubed
2 tsp: Sweet paprika,
2 tsp: Salt,
Directions:
fPrepare casings. Grind the meat and fat together through the coarse
disk. Add remaining ingredients and mix well. Grind through the fine
disk twice. Stuff into casings, tie off into 3-4" links and cook as
for any fresh sausage.
