English Eggs Recipe

Ingredients:
**From Roger Moore... 007**,
4 large: Eggs,
2 T: Unsalted butter,
Salt and pepper,
1 medium: Tomato, peeled, seeded,
4 ounce: Freshly grated sharp,
-chopped,
-cheddar cheese, about 3/4
2 each: Green onions, thinly sliced
-cup,
Directions:
Melt 1 tbsp of the butter in a small skillet over high heat. Add the
tomato and green onions and cook until onions have softened, about 3
minutes. Transfer to a bowl. Melt the remaining tbsp of butter in
the same pan. Beat the eggs until well blended in a small bowl. Add
salt and pepper to taste. Pour the egg into the hot butter, reduce
heat to medium and scramble by folding gently-not stirring-until the
eggs have set, about 3 minutes. Gently fold in the tomato mixture.
Transfer to a servingplatter and sprinkle with cheese. SErve
