Puffed-up Turkey-cheese Sandwiches Recipe

Ingredients:
2/3 cup: Turkey, cooked chopped
1/3 cup: Fat-free mayonnaise,
3 tbsp: Celery,
2 slice: Whole wheat bread, toasted
1 tbsp: Sweet green peppers, chopped
-On one side,
1 tbsp: Apples, chopped
1: Egg white,
1/4 cup: Fat-free egg substitute,
2 tsp: Parmesan cheese,

Directions:
Combine the turkey, celery, onions, pepper, apples, egg substitute, 1
tb of the cheese and the mayonnaise. Place bread on the baking sheet,
toasted-side down. Spread the untoasted side with the turkey
mixture. Bake at 350 for 15 minutes. Meanwhile, beat the egg white
until stiff but not dry. Fold the remaining cheese into the egg
white, and top each sandwich with a dollop of the mixture. Sprinkle
each wtih Parmesan. Increase the oven temperature to 450 degrees and
bake until the topping is puffy and golden brown. Servings: 2. Pre
