Sauteed Plantains And Sweet Potatoes Recipe

Ingredients:
2 tbsp: Butter or margarine,
1: Garlic clove, miced
2 tbsp: Cooking oil,
1/2 cup: Chicken or beef broth,
2 cup: Sliced cooked sweet potatoes,
2 tbsp: Butter or margarine,
-or yams,
2 tbsp: Chopped fresh thyme, dill,
2: Plantains, peeled & chopped
-chervil, or savory
1/2 cup: Chopped green onion,
Salt to taste,
1/2 cup: Chopped cooked ham, opt
Pepper to taste,
Directions:
In a large skillet, melt the first 2 tablespoons of butter and
cooking oil until hot. Add potatoes, plantains, onion, ham, if
desired, and garlic. Cook stirring frequently, about 5 minutes. Add
broth. Cover and simmer 10 minutes or until plantains are tender. Add
remaining butter and desired fresh herbs. Season, to taste, with salt
