Ginger-flavored Chinese-style Adzuke Beans Recipe

Ingredients:
2 cup: Adzuke beans, dried
Star anise, optional
1 centiliter: Garlic,
1 tsp: Salt,
6: Peppercorns,
1: Onion,
Ginger, fresh, 1 inch piece
1/4 cup: Molasses, or plum jelly
Cinnamon stick, 1 inch piece
2 tbsp: Sweet sherry,
10: Coriander seeds,
1 tbsp: Soy sauce, (Tamari)
2: Cloves, whole

Directions:
Put half of the adzuke beans into a pot with 3 cups of water, and
bring them to a boil. Tie the garlic, peppercorns, ginger, cinnamon,
coriander, cloves and a small piece of the star anise, if using, into
a spice bag. Put the bag into the bean pot with the salt, remaining
adzuke beans and the onion. Bring the mixture to a boil again, then
cover and cook for about two hours, or until the beans are tender.
Remove the onion and the spice bag. Stir in the molasses or jelly,
sherry and tamari soy sauce. misc01
