Low-fat Blueberry Muffins Recipe

Ingredients:
1 3/4 cup: Unbleached flour,
2 1/4 cup: Frozen blueberries,
2 t: Baking powder,
1 1/2 T: Canola oil,
1 t: Baking soda,
1 t: Vanilla extract,
3/4 cup: Oat bran,
1 medium: Egg,
1 cup: Applesauce, unsweetened
3/4 cup: Maple syrup,
Directions:
sift flour, baking powder, and baking soda together. Add oat bran
and stir with spoon. In 1/4 cup of the dry mix, push the
blueberries gently around to coat.
in another bowl, combine remaining ingredients (applesauce, oil,
vanilla, egg, and maple syrup).
Stir the dry ingredients into the wet until just moist. Add
blueberries, fold into mixture (GENTLY..GENTLY).
Spoon into lightly greased muffin tin (or use muffin papers)
bake until golden, about 25 minutes in a 400 deg oven.
