Apple And Prune Kuchen - Country Living Recipe

Ingredients:
1/2 cup: , (1 stick) plus 2 T
2 medium: Red baking apples,
-butter, softened
10: Pitted prunes flavored with,
3/4 cup: Granulated sugar,
-lemon or orange essence,
2 Large: eggs,
1/4 cup: Firmly packed light-brcrwn,
1 t: Vanilla extract,
-sugar,
1 cup: Unsifted all-purpose flour,
1/4 cup: Light corn syrup,
1 t: Baking powder,
1/4 t: Ground cinnamon,
Directions:
1. Grease and flour an 8-inch springform pan. Heat oven to 350F. In
large bowl, with electric mixer on md speed, beat 1/2 C butter and
the granulated sugar until well mixed. Add eggs, one at a time,
beating well after each addition. Beat in vanilla.
2. Reduce mixer speed to low; gradually beat in flour and baking
powder until smooth and fluffy. Spread batter into prepared pan and
set aside.
3. Peel, core, and cut 1 apple into thin slices. Cut each prune in
half. Scatter prunes over batter. Arrange apple slices in concentric
circle, overlapping very slightly, over prunes and batter. Arrange
leftover slices in center.
4. Bake 70 to 75 minutes or until cake tester inserted in center
comes out clean. Cool cake in pan on wire rack until wann or to room
temperature.
5. Meanwhile, cut remaining apple in half and remove core with
melon-ball cutter. Thinly slice unpeeled apple into wedges.
6. In 2-quart saucepan, melt remaining 2 T butter over md heat. Add
apples and sautd until soft-about 1 minute. Remove to bowl. Add brown
sugar, corn syrup, and cinnamon to saucepan and heat to boiling. Boil
mixture 3 min- utes or until slightly thickened. Remove from heat.
7. Remove rim of pan from cake. Transfer cake to serving plate.
Drizzle top of cake lightly with half of sugar mixture. Arrange apple
slices on top. Drizzle top of cake with remaining sugar mixture.
Serve cake warrn or at room temperature.
