Brown Rice And Chicken Salad Recipe

Ingredients:
1 package: , (10 ounces) frozen green
1/3 cup: Sliced pimiento stuffed,
-peas,
-olives,
3 cup: Cold cooked brown or white,
1 small: Onion, chopped, (about 1/4
-rice,
-Cup),
2 cup: Cut-up cooked chicken,
1 cup: Mayonnaise or salad,
2 medium: Stalks celery sliced, (about
-dressing,
1: Cup),
2 tbsp: Lemon juice or vinegar,
4 ounce: Process sharp American,
1/2 tsp: Salt,
-cheese, cut into cubes
1/8 tsp: Pepper,
-, about 1 cup

Directions:
Rinse frozen peas with cold water to separate; drain. Mix peas, rice,
chicken, celery, cheese, olives and onion. Mix remaining ingredients;
toss with chicken mixture. Cover and refrigerate at least 2 hours.
Garnish with additional sliced pimiento-stuffed olives or tomato
wedges if desired.
