Tuna Croquettes With Mustard Cream^ Recipe

Ingredients:
1 cup: Mashed potatoes,
-canola oil, lightly flaked
1 medium: Onion, finely chopped
-with fork,
1 tbsp: Plain nonfat yogurt,
-pepper to taste,
1/4 cup: Chopped dill, lightly
2: Egg whites, lightly beaten
-packed,
1/4 cup: Plain nonfat yogurt,
2 tsp: Fresh lemon juice,
1 tsp: Dijon mustard,
1 can: , (9 1/4oz) tuna packed in
Directions:
Combine potatoes, onion and yogurt until smooth. Stir in dill, lemon
and pepper. Lightly fold in tuna. Pour in egg whites and mix. Divide
misture into 6 croquettes. Spray a large nonstick skillet with butter
flaovred Pam. Heat skillet over medium heat until hot. Cook 1 1/2
minutes on each side or until nicelybrowned and heated through.
Combine yogurt and mustard. Blend until creamy. Place croquettes on
whole grain buns and top each with 2 tablespoons of mustard cream on
each, lettuce and tomato. Serve.
