Watercress Or Spinach And Potato Soup Recipe

Ingredients:
3 cup: Chicken or meat stock,
4 medium: Potatoes, grated
1 cup: Milk or cream,
3/4 cup: Washed chopped watercress or raw spinach,
1 1/2 tsp: Salt,
1 dash: Pepper,
1/4 cup: Grated cheese,

Directions:
Heat stock to boiling, add grated raw potato and SIMMER gently for 10 to 15
minutes, stirring occasionally. Just before serving, add milk, cress or
spinach and seasonings. Serve hot with a sprinkling of grated cheese on
each servings. 5 servings
