White Bean And Red Pepper Spread Recipe

Ingredients:
16 ounce: White beans, 1 1/2 cups cooked
1/3 cup: Red peppers, roasted
1 Clove: garlic, minced
2 tbsp: Fresh lemon juice, up to 3
2 tbsp: Fresh parsley, chopped
Salt and pepper to taste,
Directions:
1. Combine beans, red pepper, garlic and lemon juice in a food processor.
2. Blend until smooth.
3. Stir in parsley, salt and pepper.
Variations: Use roasted garlic. Substitute basil or dill for parsley.
