Zucchini-crusted Pizza Recipe

Yield: 4 -6 serving

Ingredients:

CRUST
3 1/2 cup: Grated zucchini--, (grate it coarsely)
3: Eggs, beaten
1/3 cup: Flour,
1/2 cup: Grated mozzarella cheese,
1/2 cup: Grated parmesan cheese,
1 tbsp: Fresh basil leaves, minced--, (if you dont have fresh, use 1/2 teaspoon dried)
Salt and pepper,

Directions:
Salt zucchini lightly and let stand for 15 minutes. Squeeze out all excess
moisture.

Combine all crust ingredients. Spread into an oiled 9 x 13-inch baking pan.
Bake 20 to 25 minutes, until surface is dry and firm. Brush the top with
oil and broil it, under moderate heat, for 5 minutes.

Pile on all of your favorite toppings. Bake about 25 minutes.
