Cornwallis Yams Recipe

Yield: 20 Servings

Ingredients:
6 medium: Sweet potatoes,
1/2 tsp: , salt
1/2 tsp: Cinnamon,
1/2 tsp: Nutmeg,
1/4 lbs: Butter,
3: Eggs, beaten
1/2 cup: Grated coconut,
1/2 cup: Crushed pineapple,
1 1/2 cup: Milk,
Marshmallows,

Directions:
Boil, peat and mash (with potato masher or ricer) sweet potatoes. Season
with spices. Add butter. Add eggs, coconut, pineapple and milk. Place in
a greased casserole and top with marshmallows. Bake in a 350=F8 F. oven
until light brown. Makes approximately 20 servings.
