Orange Gingerbread Recipe

Ingredients:
1/3 cup: Applesauce,
1 cup: Dark molasses,
1 1/4 cup: Orange juice,
1 tbsp: Finely grated orange rind,
2 1/2 cup: Whole-wheat flour,
1 tsp: Baking soda,
1 tsp: Cinnamon,
2 tsp: Ground ginger,
1/2 tsp: Salt,
1/2 cup: Raisins,

Directions:
Some time ago (Im behind in my reading of ff digests!) a request was made
for a gingerbread recipe. Heres one that I use, slightly modified (to
remove the added oil) from a recipe from a February 1994 issue of
Vegetarian Times.

Preheat over to 350 degrees F. In a large bowl, mix together wet
ingredients. In a medium bowl, sift together dry ingredients. Add raisins.
Add dry ingredients to wet ingredients and mix well. Pour into a non-stick
9-inch by 13-inch pan and bake 40 minutes, making sure not to overbake.
Gingerbread will be moist.

24 servings.
